Potato Cakes

I actually had a meal I enjoyed this week so thought I'd share it with you!

I boiled a potato together with a piece of leek (about two inches long) until they were tender and then mashed them with a very small knob of pure butter and rice milk. I mashed up one ounce of tinned chickpeas (for protein) and mixed this into the mashed potato and leek. I then put in two teaspoons of cornflour to bind it together and formed the mixture into three potato cakes. I fried these in a non stick pan with olive oil until golden on both sides and served them with a carrot and a courgette which I'd steamed while the rest was cooking.

And I didn't feel smelly next morning!!!
